What is Home Kitchen Microbiology? 🦠

Microbiology is the study of tiny life forms. Our mission is to explore how these organisms—bacteria, fungi, and viruses—interact with our family's food, surfaces, and tools at home. Each week, we will focus on a different area of our investigation:

  • Spoilage & Pathogens (The Case of the Missing Freshness): Learn the conditions where Harmful bacteria (pathogens) grow and how Spoilage-Causing microbes ruin food, helping you keep your family's food fresher and safer, longer.

  • Fermentation and Beneficial Microbes (Meet the Flavor Creators): Discover the Beneficial bacteria and yeasts used to create nutritious, flavor-packed foods like yogurt, sourdough, and pickles.

  • Hygiene and Contamination (CSI: Countertop): Master best practices for cleaning and preventing cross-contamination to safeguard your family from foodborne illnesses.

Why Should Your Family Care? Your Wellness Starts Here! 💪

Understanding the microbial life in your kitchen is the ultimate superpower for a healthy family. Don't miss a single step of this series—the full picture will transform your kitchen confidence and turn your kids into science enthusiasts!

Organic Homemade Pizza Recipe

This recipe yields one large pizza (about 12-14 inches) and takes approximately 2 hours, including rising time.

Organic Pizza Dough

Making the dough is the key to an organic pizza. Look for organic flour, yeast, and olive oil.

Prep time: 15 minutes2

Rise time: 90 minutes3

Yields: 1 large crust

Ingredient

Amount

Notes

Warm Water

1 cup

Should feel warm to the touch (around $105^\circ$F or $40^\circ$C).

Active Dry Yeast

2 tsp (or 1 packet)

Ensure it's fresh for a good rise.

Organic Cane Sugar or Honey

1 tsp

This feeds the yeast.

Organic All-Purpose or Bread Flour

3 cups, plus more for kneading

Bread flour gives a chewier crust.

Sea Salt

1 tsp

Organic Extra Virgin Olive Oil

2 Tbsp, plus more for the bowl

Instructions:

  1. Activate the Yeast: In a large mixing bowl, combine the warm water, yeast, and sugar (or honey).4 Let it sit for 5 to 10 minutes until a foamy layer forms on top. This is the yeast activating!

  2. Mix the Dough: Add the olive oil, salt, and 2 cups of the flour to the foamy mixture. Mix with a wooden spoon or stand mixer. Gradually add the remaining flour until the dough comes together into a shaggy ball.5

  3. Knead: Turn the dough out onto a lightly floured surface. Knead for 5 to 8 minutes until the dough is smooth and elastic.6 It should be slightly tacky but not stick to your hands.

  4. First Rise: Lightly grease a clean bowl with olive oil.7 Place the dough ball in the bowl, turning to coat. Cover the bowl with a clean kitchen towel or plastic wrap. Let it rise in a warm spot for about 90 minutes, or until doubled in size.8

  5. Pre-Bake Prep: Punch the risen dough down to release the air. Place it on a lightly oiled pizza pan or baking sheet. Gently stretch and press the dough to form a circle to fit your pan.

Quick & Easy Organic Pizza Sauce

Using high-quality organic canned crushed tomatoes is the quickest way to great sauce.

Prep time: 5 minutes

Cook time: 5 minutes

Yields: Enough for 1-2 pizzas

Ingredient

Amount

Notes

Organic Crushed Tomatoes

1 (15 oz) can

Look for low-sodium or unsalted.

Organic Olive Oil

1 Tbsp

Garlic Powder

1/2 tsp

Or 1 clove fresh minced organic garlic.

Dried Organic Oregano

1 tsp

Dried Organic Basil

1/2 tsp

Sea Salt & Black Pepper

To taste

Instructions:

  1. In a small saucepan, warm the olive oil over medium-low heat. Add the garlic powder (or fresh garlic) and cook for 30 seconds until fragrant.

  2. Stir in the crushed tomatoes, oregano, basil, salt, and pepper.

  3. Let the sauce gently simmer for 5 minutes. This helps the flavors blend.

  4. Remove from heat and let it cool slightly while you finish prepping the dough.

Assembly & Baking

Oven Temperature: 9$425^\circ$F (10$220^\circ$C)11

  1. Par-Bake (Optional but Recommended): Place the stretched crust in the preheated oven and bake for 5 minutes.12 This helps prevent a soggy bottom.

  2. Top the Pizza: Remove the crust from the oven. Spread a thin layer of the organic pizza sauce over the dough, leaving a small border for the crust.

  3. Add Cheese & Toppings:

    • Cheese: Use organic mozzarella (shredded or fresh) and a sprinkle of organic Parmesan.

    • Toppings: Use any of your favorite organic vegetables (sliced onions, bell peppers, mushrooms, spinach, etc.) or organic meats (like pepperoni or sausage).

  4. Final Bake: Return the pizza to the oven and bake for another 10 to 15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

  5. Serve: Let the pizza rest for a few minutes before slicing and serving. Enjoy your fully organic creation!
